I can hardly believe it myself, but we had another “Winner, winner, the whole family ate the dinner” night! It’s rare that I find a recipe that everyone eats and enjoys, but it happened. And we even have a 23 month old and a picky 5-year old in the mix! Today, I’m sharing another recipe in the My Crew Approves series – Korean Ground Beef.
Thanks to a girlfriend for sharing the recipe, I made it, they tried it and we loved it! It’s a simple recipe using ground beef and served over cauliflower rice, another family favorite.
I was hoping there would be a handful of recipes to share in the My Crew Approves series by now, but what I’ve realized is we haven’t tried many new things! Our go-to recipes stay in the rotation and Ted and I eat a lot of simple meals – a protein and a vegetable or salad since starting another fitness challenge in April.
Plus, during Stay at Home, we’ve been doing “Takeout Tuesdays” to support local restaurants and then sometimes even another takeout night on the weekend!
But alas, here is the most recent full family approved meal!

MY CREW APPROVES: KOREAN GROUND BEEF + CAULIFLOWER RICE
KOREAN BEEF INGREDIENTS
- 1 lb. lean ground beef

1 tbsp Garlic
-
1 tbsp Ginger, fresh [I used ground Ginger]

1/4 cup Green onions
-
1 tbsp Honey
-
1/4 cup Low Sodium Soy sauce
-
2 tbsp Avocado oil [I substituted olive oil]
-
1 tsp Cornstarch
-
1/2 tsp Red pepper flakes [you could sub chili powder for slightly less heat]

1 tbsp Sesame oil
*I double the sauce, but not the amount of red pepper flakes!
DIRECTIONS FOR EASY KOREAN GROUND BEEF
- For the sauce: Whisk together the soy sauce, honey, cornstarch and red pepper flakes. [Again, I double the sauce, but not red pepper flakes!]
- Then cook the ground beef in some oil until no longer pink, breaking it up as you go.
- Next, drain the beef and return it to the skillet. Then add the garlic and ginger.
- Stir the sauce into the beef. Cook until heated through and the sauce thickens.
- Turn off the heat and drizzle the top with sesame oil, sprinkle on sliced green onions and serve over riced cauliflower. You can also drizzle each individual bowl with the sesame oil if some like it more than others. It really does give it great flavor!
