It’s always Taco Tuesday over here and when I want to go all out and add a yummy side dish to our meal [or a topping for our tacos] I love to make this Fresh & Easy Mexican Slaw. It’s the perfect combination of citrus & sweet with a hint of heat. We love our spice over here! I’ve made it for years and its a wonderful accompaniment to all types of tacos, but shrimp and chipotle shredded beef are my favorites to garnish with this mexi-slaw!

FRESH & EASY MEXICAN SLAW
What I love most about this coleslaw recipe is how light and fresh it is. Instead of a creamy, mayo-based slaw, this one has a combination of olive oil, cider vinegar and fresh lime juice giving it just the right amount of tang!
Whether its served as a side or a garnish to your tacos, it’s sure to be a crowd pleaser. I often double the batch for parties and large gatherings. It always goes so fast!
INGREDIENTS FOR FRESH & EASY MEXICAN SLAW
- 2 bags coleslaw mix
- 1 cup chopped green onion
- 1-2 chopped fresh jalapeños (remove most seeds)
- 1 diced red pepper
- 1 cup chopped fresh cilantro
- 4 TBSP olive oil
- 3 TBSP Apple cider vinegar
- 3 TBSP rice vinegar
- Juice from 1 lime
- 1 TBSP honey
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp cumin
- 1/4 tsp chili powder
- 1 TBSP sugar
- Sprinkle cayenne powder
DIRECTIONS FOR FRESH & EASY MEXICAN SLAW
1 // Gather ingredients & chop green onion, jalapeno, red pepper and cilantro.
2 // Combine chopped ingredients with coleslaw bags in a large mixing bowl.
3 // Stir until combined.
4 // Then add wet ingredients and stir mixture until slaw is thoroughly & evenly covered.
5 // Refrigerate for 1-2 hours or overnight before serving. Toss slaw and add fresh cilantro on top [optional] to serve.
I started making and serving this mexi-slaw years ago and have tweaked it time and time again to get it just the way we like it. We love it as leftovers and add it to just about any taco, burrito or plate of nachos.
It’s delicious on its own too!
