Today I’m sharing one of my go-to Summertime dips! Its fresh and delicious and has the perfect mix of sweet & salty. I’ve made it 3 or 4 times in the last few weeks and this Easy Texas Caviar is always a hit! Read on for the recipe and several other yummy ones to try as well!

EASY TEXAS CAVIAR RECIPE
You may have tried a version of this Texas Caviar [sometimes called Cowboy Caviar] and we can’t get enough of it over here! The ingredients include a coupled cans and a few chopped fresh ingredients and in no time at all, you’ve got a tasty dip for your all the chips! We even top our grilled chicken with it for dinner.
This Texas caviar is always in rotation with my Spicy Corn Dip that I can basically make in my sleep! Both are always crowd pleasers!

TEXAS CAVIAR INGREDIENTS
- 1 can white shoepeg corn [drained]
- 1 can black beans [drained]
- 1 can black-eyed peas [drained]
- 1 green pepper [chopped]
- 1 bunch chopped green onions
- 1 cup chopped celery
- 3/4 cup cider vinegar
- 1/2 cup oil
- 1 cup sugar or splenda [I cut down to 3/4 cup]
- 1 tsp water
- 1/2 tsp pepper
- 1 tsp salt
INSTRUCTIONS FOR TEXAS CAVIAR
1 // Drain & rinse all canned goods and put in large mixing bowl.
2 // Chop green pepper, green onions & celery and add to bowl.
3 // Bring cider vinegar, oil, sugar, water, salt & pepper to a boil on the stovetop and then let cool.
4 // Pour the mixture over the beans & veggies and stir until thoroughly mixed.
5 // Refrigerate and serve with tortilla chips or Frito scoops!
Make this for your next weekend BBQ and bring extra chips – you won’t want to run out! This Texas Caviar recipe easily doubles for large gatherings and parties. Its definitely a Summertime favorite!
