Remember when I said pineapple everything is acceptable year-round, but especially in the Summer? Well, I hope you’re ready for another dose coming your way! Now almost 37 weeks pregnant [see my 36 Week Bumpdate here], I haven’t been doing much of our family’s grocery shopping for awhile now. Why? Well basically because I would buy alllll the things and then proceed to want to eat allll the things. Plus T has been such a trooper and offers to stop on his way home from work or run out over the weekend. So when I asked him a couple weeks ago to pick up pineapples for my Tropical Summer Table and Fruit-filled Ice Mold Wine Chiller, I may have asked him to buy 6. Yes, 6 whole pineapples. In order to not let them all go to waste, I decided to make a simple Summer salsa and it quickly become known as the “Perfect” Summer Salsa [with Fresh Pineapple and Corn].
We’ve all been munching on it daily around here!
If you know our crew, then you’ll know we are big sauce and condiments people. You know, we just like to dip things! Chips and salsa are no exception and with all the leftover pineapple laying around, we decided to make a few batches of salsa using the fresh pineapple and a few other salsa staples plus one ingredient we had on-hand in the pantry.
Here is our first version:
1 jar of Corn & Chile Tomato-less Salsa [Trader Joe’s]
1/2 pineapple, diced
fresh cilantro
And our second version:
1 jar of Corn & Chile Tomato-less Salsa [Trader Joe’s]1 pineapple, diced
1 jar or can roasted red peppers, chopped
1 tomato, diced
1 jalapeno, diced
1 red onion, chopped
juice of 1 lime
2 TBSP apple cider vinegar
fresh cilantro
Don’t get me wrong, version 1 was DELICIOUS, but since we had an obscene amount of pineapple left to use, we decided to experiment and make a big hearty batch of Summer salsa using a few more ingredients and added a little more heat. And I’m telling you the secret to both versions, was the fresh pineapple and the CORN!
We’ve been dipping our tortilla chips [the lime ones are delicious] in it as well as eating it by the spoonful. Its a little bit sweet, a little bit spicy and oh so tasty! We took a bowl of it to our neighborhood Flamingo Friday party last week and it was a huge hit.
I’m telling you, next time you’re at the store, grab a pineapple, chop it up and make a salsa with it! The pineapples that didn’t go in the salsa were quickly taken care of by two little guys. They’ve been requesting a little bit at each meal 🙂
