One can never have too many easy corn dip recipes in their back pocket, so today I’m sharing one of the new ones I’ve been making! This delicious dip has a little heat and a lot of flavor and is SO simple to whip up. No cooking or heating whatsoever! I promise you’ll want to put this Easy Corn Dip Recipe in your rotation!
I’ve been making this Spicy Cold Corn Dip for years and years, but after a friend brought this new-to-me corn dip to our High School Girl’s weekend in Galena, IL earlier this year, I knew I would absolutely be making it at some point.
It was SO good!
After all, who can resist a heaping tortilla chip full of ANY corn dip?!
In fact, when all of us girls were chatting about what we were bringing, we laughed because at least 4 people said “I’ll bring corn dip!” We joked that there is no such thing as too much corn dip! Especially when everyone’s recipes would most like be different.
EASY CORN DIP RECIPE
Here is the newest spicy corn dip I’ve been making ever since!
EASY CORN DIP INGREDIENTS
- 2 cans Mexicorn drained
- 1 small, finely diced onion
- 1 cup shredded Cheddar
- 1/2 cup sour cream [I use light]
- 1/2 cup mayo [I use light]
- 1 tsp Cumin
- 1 tsp Cayenne Pepper
- 1/4 tsp salt
- 1/4 tsp pepper
EASY CORN DIP DIRECTIONS
There is literally only 3 steps to follow!
1 || Mix all ingredients in a mixing bowl. Sometimes I double the recipe if I’m serving a large group or if I want leftovers ha! Depending on how much spice you want, you can always alter the amount of Cayenne. We like heat, so I’ve even added a little bit more 😉
2 || Refrigerate for an hour.
3 || Serve with tortilla chips and enjoy!
Then watch the entire bowl disappear in no time at all. 😉
I strongly believe you can please any crowd with a good corn dip and this one has passed the test time and time again!
The only differences between my original go-to corn dip is that one has red onion, jalapeno and no Cumin or sour cream, but both corn dips are equally as delicious and easy to make!
And believe me, I can make a meal out of this dip and a spicy margarita, no need for anything else.
