Can you believe we’re on Day 11 already?! We’ve covered so much in this series — the fridge, my yearly refresh list, my drop-off-to-gym outfit, breakfast burritos, washing the lunchboxes, backpack SOS kits, our snack bin, the homework drawer, school paper storage, and prepping myself for the year ahead. Today we’re back in the kitchen for one of the snacks I make on repeat all school year long: peanut butter energy balls!

Why This Snack Made the List

Part of prepping for school isn’t just backpacks and lunches — it’s having a go-to snack ready for when they walk in the door starving after school. These peanut butter energy balls are exactly that.

Have a snack that you’ve mastered – its a crowd favorite and its so easy to make, you can memorize the recipe! They’re simple, they freeze beautifully, and they disappear fast in our house, which honestly says a lot. I actually first shared this recipe back in 2020, and it’s still one I make on repeat! Our entire family LOVES them!

The Recipe

Ingredients:

  • 1.5 cups dry oatmeal [I use Quaker Old-Fashioned Oats]
  • 1/2 cup creamy peanut butter [I use Kirkland’s]
  • 1/4 cup chia seeds
  • 1/4 cup flaxseed
  • 1/4 cup slivered almonds
  • 1/2 cup mini semi-sweet chocolate chips
  • 1/4 cup honey
  • 1 tsp vanilla extract

Want extra protein? Sub in a scoop of chocolate protein powder — I usually add it myself, but I was out the last time I made these and made them anyway. They turned out just as good!

Instructions:

  1. Add all ingredients to a large bowl and combine until thoroughly mixed.
  2. I use a round cookie scoop to roll them so they’re even and smooth every time.
  3. Line them on a cookie sheet and freeze.
  4. Once frozen, toss them into a bowl or container to keep in the fridge.

A Fair Warning

This is the one snack that doesn’t last more than a day or two in my house — I always end up having to double or triple the batch. If your kids are anything like mine, I’d plan for that from the start and just make a bigger batch the first time around. It’ll save you from having to start over again two days later!

Easy Grab-and-Go, Any Time

Once these are made, they’re genuinely ready for anything — backpacks, car rides, after-school hunger, or just a quick bite for me while I’m running around getting everyone else fed. It’s one of those small recipes that ends up carrying a lot of weight in our week.
